Sweet Apple Chips
Ingredients:
2 Small Apples (cut into thin slices as shown above)
2 Tbsp. Brown Sugar
1 tsp. Cinnamon
Directions:
Preheat your oven to 350 F and place apple slices on a baking sheet lined with parchment paper. Roast for 10-15 minutes, or until the edges start to curl and brown a little bit. Set out to cool, and enjoy!

Healthy Pizza Crust
Ingredients
1/4 C old-fashioned oats
1 TBSP flax seeds
1 egg
Thoroughly mix ingredients together in a bowl, then arrange the “dough” on a cookie sheet in a small circle (about 5-6” diameter). You can also use a pie-baking dish, like blogilates did. Bake in oven at 350 for 15-20 minutes. Remove from oven and apply toppings.
Toppings
Here’s where I got creative. But you should totally copy me at least once, because this was basically a foodgasm. I put the ingredients on the pizza crust in the order I am listing them.
1 TBSP pesto, in place of pizza sauce
A couple leaves of spinach
About 3 TBSP fat-free feta cheese
Lean ground turkey (already prepared)
Italian seasoning!

Perfect Veggie Burgers
Ingredients:
1/2 cup onion, diced
1 large garlic clove, minced
Flax eggs: 2.5 tbsp ground flax + 1/2 cup warm water, mixed in bowl
1 cup oats, processed into flour* (other flours might work)
1.5 cups bread crumbs (I processed 3 pieces of Ezekiel bread until fine crumb)*
1 cup grated carrots
1 cup cooked black beans, rinsed and roughly pureed or mashed
Heaping 1/4 cup finely chopped parsley (or fresh herb of choice)
1/3 cup almonds, chopped (toasted if preferred)
1/2 cup sunflower seeds, (toasted if preferred)
1 tbsp. Extra Virgin Olive Oil
1 tbsp Tamari (soy sauce)
1.5 tsp chili powder
1 tsp. cumin
1 tsp. oregano
Kosher salt and black pepper, to taste (I used about 1/2 tsp kosher salt)

Directions:
- Preheat oven to 350F (if baking). In a large skillet, sauté onions and garlic in 1/2 tbsp oil. Mix your flax egg together in a small bowl and set aside for at least 10 mins while you prepare the rest of the ingredients.
- Place all ingredients (except spices and salt) into a large mixing bowl and stir very well. Now, add seasonings and salt to taste.
- With slightly wet hands, shape dough into patties. Pack dough tightly as this will help it stick together. I made 8 medium patties.
- Cooking methods: You can fry the burgers in a bit of oil on a skillet over medium heat for about 5 minutes on each side. If baking in the oven, bake for 30-36 mins (15-18 minutes on each side) at 350F, until golden and crisp. For the BBQ, pre-bake the burgers for about 15 minutes in oven before placing on a pre-heated grill until golden and crisp on each side. Our preferred method of cooking was frying in the skillet!
Triple Chocolate Chunk Muffin
Ingredients:
1 3/4 c oats
3 egg whites
3/4 cup unsweetened cocoa
1/2 cup unsweetened applesauce
1 tsp. vanilla extract
1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1/4 tsp. salt
1 cup hot water
1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia
1/2 cup semi-sweet chocolate chips (or use white chocolate or peanut butter chips!)

In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.
Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.
Place muffins tins in the oven for 10 minutes. After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin.
Place the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean. *Note, you could skip this step by putting all of the chips in the batter, and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!Cool muffins before removing from pan. ENJOY!!!
